Canoas 

Ingredients 

4 -6 very ripe plantains

Oil for frying Picadillo (meat)  See recipe 

1 pound Mozzarella cheese 

1 red bell pepper or Jar of Fancy Pimientos, optional

Procedure

1. Have your picadillo ready. Preheat oven 350 degrees F.

2. Cut the ends of the plantain, to do so, slit the sides lengthwise in three places, and peel the plantain.

3.  In a deep skillet heat about 1 inch of oil.

4.  When the oil is very hot, lower the heat to medium-high and fry the plantain whole on both sides.

5. Then slit each plantain lengthwise 1/2 way (not all the way down) and continue frying.

6. When the plantain is golden brown, take out of the oil and place on a paper towel to dry. Add the picadillo in the center, then add  your choice of cheese  (inside the slit that you previously made).

7. Place in the oven for about 6 minutes.

8. Slice the fancy pimentos and place in the center of the plantain.
